Bobcat fans, as we get ready to gather in our homes and bars across Montana for the National Championship game this Saturday, we get to focus on two of my favorite things.

Football and Food.

The two go hand and hand.  For years now, people have been getting together to cheer on their favorite team while partaking in all kinds of culinary creations.  Folks, obliviously have their favorites. Wings are always popular, as are chips and dip, little smokies, veggie trays, and one of those huge sub sandwich things.

Of course, many folks will be preparing bison on Saturday since our beloved Bobcats are taking on the North Dakota State Bison.  So, I thought, well how about we share some recipes?  I mean, who doesn't love a tasty bison dish?  So, here are some of the more popular foods that you can make with Bison.

Bison Meatballs.  Who doesn't love meatballs?  They're a perfect dish to make in a slow cooker as you just put in the ingredients and let that magic crockpot do its thing. One of my favorite meatball recipes for the slow cooker involves grape jelly. Here's the recipe. It calls for frozen meatballs, but you can easily make your meatballs out of bison, freeze them, then follow the recipe.

Bison Tacos.  I've never met anyone that doesn't like tacos.  So, how about tacos with bison burger? Sounds great right? It's super simple, you just replace the hamburger with the bison burger, and boom. Bison Tacos!

Bison Burgers and Sliders.  Of course, there are a ton of restaurants around Bozeman that serve up delicious bison burgers and sliders.  I love the bison sliders at the Bacchus, and Ted's next door has amazing bison burgers, as do most other burger places around Bozeman. However, if you want to make them at home, it's super simple.  Throw on your favorite toppings and you've got yourself a winner.

Bison Chili. Who doesn't love a great bowl of chili?  It's chili season and the good news is that if you make a big enough batch, you will have leftovers after the game. Plus, everyone knows that chili tastes better the next day, right?

Finally, and I've been holding on to this one because it sounds amazing....are you ready?

Bison Mac and Cheese.  Whaaaat???  Ok, that's two of my favorite things put together.  I recently started cooking my homemade mac and cheese on my pellet grill, which by the way, is amazing.  So the idea of adding bison to mac and cheese just went to the top of my "must try" recipe list.  If you're up for it, here's the recipe.
